Hello Anchor Campgrounds family and friends. Mike and I think it will be fun to have a blog to further connect and continue the family atmosphere at our campground. After all, the lake, the Up North, the county forest and the entire Spooner and Washburn County area make Anchor Campgrounds special, but it's the people who really make it the gem that it is.


What do I think of when I start to plan a camping trip? The meals, of course. While you can grab snacks at our store (coming in 2025!), a beer or frozen pizza at the Red, White and Brew, or even head to The Still Bar and Grill just steps down the road (Hazel's favorite is the fried donuts appetizer!), the best is always cooking around the campfire or on the grill.


Some of my best camping memories include our three big kids (now adults) helping make campfire meals.

 

Our son would be wandering further and further into the woods finding sticks or down limbs for the fire, while our eldest would be poking the campfire trying not to get burned.  Our middle child would be racing around the field on her 50 cc ATV, blonde ponytail streaming out behind her.  Once they knew we were making foil packet dinners, though, all three would come running.  Now even our 12 year old loves to help make Campfire Foil Packet Sweet and Sour Supper and helped do all the prep work for our Devil’s Lake camping trip last year! 

 

Campfire Foil Packet Sweet and Sour Supper

Prep time:  10  minutes

Cooking time:  Varies

Serves:  5

 

Ingredients:

2 Green Peppers

1 Large Yellow Onion

1 Can Pineapple Chunks in its own juice

1 Box Minute Rice

1 Pound Ground Beef

Soy Sauce to taste

Aluminum Foil

 

Directions:

Cut Green Pepper and Onion into chunks about the same size as pineapple chunks. Place into large Ziplock.

Put in cooler to go camping:  Bag of chunked green pepper and onions, ground beef. 

Bring in dry bag to go camping:  Minute Rice, Soy Sauce and Aluminum Foil and Can Opener.

 

Make campfire nice and hot. 

Lay out large squares of foil, one for each meal.

Pat thin layer of ground beef in bottom of foil.  Put handful of (uncooked) Minute Rice on top of beef.  Add chunks of pineapple, green pepper and onion.  Add two teaspoons of pineapple juice from can and several shakes of soy sauce, enough to wet all the Minute Rice.  Fold aluminum foil square, sealing all the edges, and place on hot coals.  Depending on how hot your fire is, dinner should be ready in just a few minutes.  Check beef to make sure that it is thoroughly cooked. 

 

Tips:  We usually make one first, then test out if we are adding enough liquid for the rice to cook, and how long it will take to thoroughly cook the ground beef in our fire.  We also usually eat the meal right out of the packet, placed on a paper plate. 

 

No matter how long it takes, the kids are usually eager to eat their creations and often start making another foil packet supper.  Don’t forget to save room for dessert!
